Suwaa | El Salvador Divisadero

This crop is native to the temperate foothills of El Salvador, where beans are grown at an altitude of 1350–1550m. This range gives specialty coffee a remarkable balance of sweetness and delicate acidity, with a smooth body that facilitates extraction and enriches the aroma in the final cup. The chocolate, caramel, and nut notes blend harmoniously, with no dominant flavor, but rather layers smoothly, creating a long-lasting sip with a clean, soothing finish. The washed processing here reflects a meticulous understanding of flavor science in specialty coffee; it emphasizes purity and clarity and minimizes aromatic confusion. The sensory reading is as neat and controlled in the filter as in espresso. In terms of preparation, the superiority of this product is evident in the espresso for which it was originally designed. The balanced sugar structure delivers a concentrated shot with a stable crema surface and a warm chocolate note, preceded by a delicate caramel sweetness. The Katui and Bourbon varieties coexist under a dried-processed canopy that gives the cup a clearer body and a deep, natural sweetness. Nuts take center stage, along with smooth vanilla and harmonious chocolate notes, in an aromatic progression reminiscent of warm baked goods and light sugars, giving this specialty coffee a friendly, timeless signature. The altitude of 1,500 meters adds a firm acidic structure that prevents heaviness and keeps the sip alert and balanced, with the flavors resting on a clean line that's easy to work with in filter and espresso. In filtration, specialty coffee from this crop rewards a precise grinder and consistent flow, highlighting nuts and vanilla with smooth chocolate in the tail. The altitude provides a slow gradual maturation of the beans, raising balanced sugars and refining acidity. The specialty coffee here has a velvety texture and a tidy finish that reflects the precision of the processing. The sip is characterized by a sincere, uncontrived sweetness, preceded by a warm, sugary note, followed by a light chocolate texture and a hint of nuttiness. The close layers are easily read in the filter and increase in intensity in the espresso.
